VEG CHILLI MILLI - We always have a Jugaad for using leftover stuff isn't it? Especially with food. Veg Chilli Mili is one such recipe.. Enjoy :)

Ingredients

For Ginger Garlic Paste

  • 1 inch Ginger (peeled & roughly chopped) рдЕрджрд░рдХ
  • 4-5 no. Garlic cloves, рд▓рд╣рд╕реБрди

For Gravy

  • 2 tbsp Oil, рддреЗрд▓
  • 1 no. Bay leaf, рддреЗрдЬрдкрддреНрддрд╛
  • Prepared Ginger Garlic Paste, рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдХрд╛ рдкреЗрд╕реНрдЯ
  • 2 large Onions (diced & optional) jiрдкреНрдпрд╛рдЬ
  • 1 tbsp Coriander powder, рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░
  • ┬╝ tsp Asafoetida, рд╣реАрдВрдЧ
  • 1 ┬╜ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • ┬╜ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • 4-5 medium Tomatoes, diced, рдЯрдорд╛рдЯрд░
  • 2 cups Water, рдкрд╛рдиреА
  • 8-10 no. Cashewnut, рдХрд╛рдЬреВ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╜ tsp Sugar, рдЪреАрдиреА
  • 1 tbsp Ghee, рдШреА
  • ┬╜ cup Water, рдкрд╛рдиреА
  • 1 tbsp Ghee, рдШреА
  • ┬╜ tsp Dry fenugreek leaves, crushed, рдХрд╕реВрд░реА рдореЗрдереА

For Sauteing Vegetables

  • 1-2 tsp Oil, рддреЗрд▓
  • 1-2 tsp Ghee, рдШреА
  • ┬╜ tsp Cumin seeds, рдЬреАрд░рд╛
  • 2 no. Green chillies (less spicy & diagonally sliced) рд╣рд░реА рдорд┐рд░реНрдЪ
  • 2 medium Carrots (peeled & julienned) рдЧрд╛рдЬрд░
  • ┬╝ tsp Sugar, рдЪреАрдиреА
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 small Cabbage, shredded, рдкрддреНрддрд╛ рдЧреЛрднреА
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • A pinch of asafoetida, рд╣реАрдВрдЧ
  • ┬╜ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • 1 no. Capsicum, sliced, рд╢рд┐рдорд▓рд╛ рдорд┐рд░реНрдЪ
  • 1 no. Red bell pepper, sliced, рд░реЗрдб рдмреЗрд▓ рдкреЗрдкрд░
  • 8-10 no. French beans, diagonally sliced, рдлреНрд░реЗрдВрдЪ рдмреАрдВрд╕
  • 1 tbsp Coriander leaves, chopped, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛
  • 2 no. Green chillies (less spicy & diagonally sliced) рд╣рд░реА рдорд┐рд░реНрдЪ

Other Ingredients

  • Processed cheese, grated, рдЪреАрдЬ

For Garnish

  • Fresh cream (for finishing) рддрд╛рдЬрд╝рд╛ рдорд▓рд╛рдИ
  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛
  • Processed cheese, grated, рдЪреАрдЬ

Process

For Ginger Garlic Paste

  1. In a mortar pestle, add ginger, garlic and grind it coarsely.
  2. Keep it aside for further use.

For Gravy

  1. In a handi, add oil, once it's hot, add bay leaf, prepared ginger garlic paste, onions and saute it until translucent.
  2. Add coriander powder, asafoetida, degi red chili powder, turmeric powder and cook it for 2-3 minutes on medium flames.
  3. Add tomato and mix it well, add water, cashewnut, salt to taste, sugar, ghee and let it simmer for a while.
  4. Cover it with the lid and cook for 10-15 minutes until cooked well.
  5. Grind the gravy to a smooth paste with the help of a hand blender.
  6. Add water, ghee and give it a quick boil.
  7. Finish it with some dry fenugreek leaves and mix well.
  8. Keep it aside for further use.

For Sauteing Vegetables

  1. In a kadai, add oil & ghee, once it's hot, add cumin seeds, green chillies and let it splutter.
  2. Add carrots, sugar, salt to taste and cook it until half cooked.
  3. Add cabbage, salt to taste and mix well.
  4. Cover it with a lid and cook until it leaves its moisture.
  5. Add asafoetida, degi red chili powder and saute it well.
  6. Add capsicum, red bell pepper, french beans and cook it for 4-5 minutes.
  7. Finish it with some coriander leaves, green chillies and mix it well.
  8. Keep it aside for further use.

For Assembling

  1. In a serving bowl or dish, pour prepared gravy, add cheese and top it up with prepared sauteed vegetables. Garnish it with coriander sprig and cheese.
  2. In another bowl or dish, pour prepared gravy and top it up with prepared sauteed vegetables. Garnish it with fresh cream and coriander sprig.
  3. Serve hot with roti.
