Apple Pastries

INGREDIENTS

  • 3 apples, peeled and cored
  • 1l (4 cups) of water
  • 60ml (¼ cup) of lemon juice
  • 300g (1 cup) of apricot jam
  • 120ml (½ cup) of water
  • 1 sheet puff pastry
  • Powdered sugar
  • Egg wash

METHOD

1. Preheat the oven to 190°C/375°F.

2. Boil a mix of apricot jam and ½ cup of water for 5 minutes. Strain it.

3. Slice apples. Place slices into a bowl of water mixed with lemon juice.

4. Slice a piece of puff pastry into 8x11 cm rectangles. Spread 1 tsp of apricot jam on top of each rectangle, and place sliced apples on top.

5. Brush the apple jam mixture on top of the apple slices.

6. Brush the edges of the puff pastry with egg wash.

7. Bake for 15 minutes. Brush with powdered sugar before serving.
