Veggie Afritada

Here's my veganized version of a popular Filipino chicken dish, Afritada. A flavorful tomato-based stewed with vegetables. It is perfect for meal prep or for serving a large crowd and is best served with rice.

Ingredients:

  • 200g silken tofu (pressed, freezed and thawed for three cycles)
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 2 tbsp cornstarch
  • 2 tbsp oat milk
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • air fry at 180°C for 10-12 minutes, flip halfway
  • oil spray
  • 5 cloves garlic
  • 1 red onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 medium carrot
  • 2 medium potatoes
  • 200ml tomato sauce
  • 400ml vegetable stock
  • 1 tbsp vegan fish sauce
  • 1 cup frozen green peas
  • salt and pepper to taste
