Street Style Double Cheese Veg Grilled Sandwich

Ingredients:
For the Sandwich Filling:
- 1 cup boiled and mashed potatoes
- 1/2 cup boiled and mashed mixed vegetables (carrots, peas, and beans)
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped bell peppers (capsicum)
- 1/4 cup sweet corn (boiled)
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chaat masala
- Salt to taste
- Butter for grilling
For Assembling:
- 8 slices of bread
- 2 tablespoons tomato ketchup
- 4 slices of cheese (you can use more for extra cheesiness)
- Butter for spreading on the bread
Instructions:
- Prepare the Vegetable Filling:
- In a mixing bowl, combine the mashed potatoes, boiled mixed vegetables, chopped onions, bell peppers, and sweet corn.
- Add the red chili powder, cumin powder, chaat masala, and salt. Mix everything together to create a flavorful filling.
- Assemble the Sandwich:
- Take a slice of bread and spread a thin layer of butter on one side.
- On the non-buttered side, spread a little tomato ketchup.
- Place a slice of cheese on top of the ketchup.
- Add a generous portion of the prepared vegetable filling on top of the cheese.
- Cover with another slice of bread. Press gently.
- Grill the Sandwich:
- Preheat your sandwich maker or grill pan.
- Place the prepared sandwich in the grill and close the lid.
- Grill until the bread is golden brown, and the cheese is melty and gooey.
- Serve:
- Carefully remove the grilled sandwich from the grill and cut it diagonally into two halves.
- Serve hot with some extra ketchup or green chutney on the side.
