5 Minutes Pineapple Cake

INGREDIENTS

For the cake batter:

  • 2 eggs
  • 100g (½ cup) of sugar
  • 70ml (¼ cup) of vegetable oil
  • 140ml (½ cup) of milk
  • 140ml (½ cup) of orange juice
  • 250g (1 ½ cups) of all-purpose flour
  • 16g (1 ⅛ tbsp) of baking powder

For the cream:

  • 1 egg
  • 25g (2 ½ tbsp) of sugar
  • 6g (2 tbsp) of cornstarch
  • 250ml (1 cup) of milk
  • 30g (2 tbsp) of butter

For the pineapples:

  • 210g (1 cup) of pineapple chunks
  • 20g (1 ½ tbsp) of butter
  • 30g (2 tbsp) of brown sugar

METHOD

1. In a small saucepan combine all of the ingredients for the cream, whisk well and cook for 10 minutes or until thick. Let cool down completely.

2. For the pineapples, melt some butter in a skillet, and add sugar and pineapple chunks. Cook for 5 minutes or until caramelized.

3. Preheat the oven to 180°C/350°F.

4. Line a 20cm cake pan with parchment.

5. Whisk eggs with sugar and vegetable oil. Add milk and orange juice. Finally, mix in flour and baking powder. Mix to combine until no lumps are left.

6. Pour the batter into a prepared pan. Top with cream and caramelized pineapples.

7. Bake for 40-50 minutes, let cool down before dusting with powdered sugar and serving.
