For the Mochi:
- 1 cup glutinous rice flour
- 1/4 cup sugar
- 1 cup water
- Cornstarch or potato starch (for dusting)
For the Filling:
- 2 ripe kiwis, peeled and diced
- Zest and juice of 1 lime
- 2 tablespoons sugar
Instructions:
- Prepare the Filling:
- In a small saucepan, combine the diced kiwis, lime zest, lime juice, and sugar.
- Cook over low heat, stirring occasionally, until the kiwi mixture thickens and turns into a jam-like consistency. This should take about 15-20 minutes.
- Remove from heat and let it cool completely.
- Prepare the Mochi:
- In a microwave-safe bowl, whisk together the glutinous rice flour and sugar.
- Gradually add the water and stir until the mixture is smooth.
- Cover the bowl with plastic wrap or a microwave-safe lid.
- Microwave the Mochi:
- Microwave the mixture on high for 1 minute.
- Remove from the microwave and stir the mixture.
- Return it to the microwave and heat for an additional 1 minute.
- The mixture should become thick and sticky.
- Shape and Fill the Mochi:
- Dust a clean surface with cornstarch or potato starch to prevent sticking.
- Scoop out small portions of the mochi and flatten them with your hands or a rolling pin.
- Place a small amount of the kiwi and lime filling in the center of each mochi piece.
- Seal the edges by pinching them together and roll it into a ball or any desired shape.
- Serve:
- Serve the Kiwi and Lime Mochi immediately, or you can store them in an airtight container with a little cornstarch or potato starch to prevent sticking.
