For the Mochi:

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1 cup water
  • Cornstarch or potato starch (for dusting)

For the Filling:

  • 2 ripe kiwis, peeled and diced
  • Zest and juice of 1 lime
  • 2 tablespoons sugar

Instructions:

  1. Prepare the Filling:
    • In a small saucepan, combine the diced kiwis, lime zest, lime juice, and sugar.
    • Cook over low heat, stirring occasionally, until the kiwi mixture thickens and turns into a jam-like consistency. This should take about 15-20 minutes.
    • Remove from heat and let it cool completely.
  2. Prepare the Mochi:
    • In a microwave-safe bowl, whisk together the glutinous rice flour and sugar.
    • Gradually add the water and stir until the mixture is smooth.
    • Cover the bowl with plastic wrap or a microwave-safe lid.
  3. Microwave the Mochi:
    • Microwave the mixture on high for 1 minute.
    • Remove from the microwave and stir the mixture.
    • Return it to the microwave and heat for an additional 1 minute.
    • The mixture should become thick and sticky.
  4. Shape and Fill the Mochi:
    • Dust a clean surface with cornstarch or potato starch to prevent sticking.
    • Scoop out small portions of the mochi and flatten them with your hands or a rolling pin.
    • Place a small amount of the kiwi and lime filling in the center of each mochi piece.
    • Seal the edges by pinching them together and roll it into a ball or any desired shape.
  5. Serve:
    • Serve the Kiwi and Lime Mochi immediately, or you can store them in an airtight container with a little cornstarch or potato starch to prevent sticking.
