Cobb Salad
This easy-to-make salad will serve as a full meal for lunch or dinner! Nicole shows you how to make a hearty Cobb salad with fresh vegetables and protein rich chicken.
Ingredients:
For the Salad:
- 4 cups chopped Romaine lettuce
- 2 cups chopped cooked chicken breast
- 6 slices bacon, cooked and crumbled
- 2 hard-boiled eggs, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup crumbled blue cheese or your choice of cheese (e.g., feta)
For the Dressing:
- 1/3 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions:
- In a large serving bowl, arrange the chopped Romaine lettuce as the base.
- Create rows of the remaining salad ingredients on top of the lettuce. Place the cooked chicken, crumbled bacon, chopped hard-boiled eggs, cherry tomatoes, diced avocado, and crumbled cheese side by side.
- In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.
- Drizzle the dressing evenly over the Cobb Salad.
- Toss the salad gently just before serving to distribute the dressing evenly. You can also serve the dressing on the side if you prefer.
- Optionally, garnish the salad with extra cheese and a sprinkle of black pepper.
