Cobb Salad

This easy-to-make salad will serve as a full meal for lunch or dinner! Nicole shows you how to make a hearty Cobb salad with fresh vegetables and protein rich chicken.


For the Salad:

  • 4 cups chopped Romaine lettuce
  • 2 cups chopped cooked chicken breast
  • 6 slices bacon, cooked and crumbled
  • 2 hard-boiled eggs, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup crumbled blue cheese or your choice of cheese (e.g., feta)

For the Dressing:

  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste


  1. In a large serving bowl, arrange the chopped Romaine lettuce as the base.
  2. Create rows of the remaining salad ingredients on top of the lettuce. Place the cooked chicken, crumbled bacon, chopped hard-boiled eggs, cherry tomatoes, diced avocado, and crumbled cheese side by side.
  3. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.
  4. Drizzle the dressing evenly over the Cobb Salad.
  5. Toss the salad gently just before serving to distribute the dressing evenly. You can also serve the dressing on the side if you prefer.
  6. Optionally, garnish the salad with extra cheese and a sprinkle of black pepper.
