Pumpkin Oatmeal Cookies

Ingredients:

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix well.
  4. Stir in the pumpkin puree until the mixture is well combined.
  5. In a separate bowl, whisk together the oats, all-purpose flour, baking soda, salt, and the spices (cinnamon, nutmeg, and cloves).
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing until a cookie dough forms. If desired, fold in the raisins and chopped nuts.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes, or until the cookies are set and the edges are golden brown.
  9. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
