Greek Chicken Pasta

A delicious 5 Ingredient pasta dish that’s guaranteed to put smiles on faces, just as it did in the Oliver household!

Ingredients:

For the Greek Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon

For the Pasta:

  • 8 oz (about 2 cups) penne or your favorite pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

For the Greek Dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the olive oil, minced garlic, dried oregano, salt, pepper, and lemon juice. Marinate the chicken breasts in this mixture for at least 20 minutes.
  2. Preheat your grill or a grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes per side, or until they are cooked through and have nice grill marks. Remove the chicken from the grill, let it rest for a few minutes, then slice it into strips.
  3. While the chicken is grilling, cook the pasta according to the package instructions until al dente. Drain and set it aside.
  4. In a large bowl, combine the cooked pasta, halved cherry tomatoes, diced cucumber, chopped red onion, Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
  5. In a separate small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  6. Pour the dressing over the pasta and vegetables. Toss everything to combine.
  7. Top the pasta salad with the grilled chicken strips.
  8. Serve your Greek Chicken Pasta at room temperature or chilled, and enjoy this flavorful Mediterranean-inspired dish.
