Here's a recipe for "Green Chicken," which is typically made with a flavorful green sauce that includes ingredients like cilantro, green chilies, and spices. This sauce gives the chicken a vibrant green color and a delicious taste.

Ingredients:

For the Green Sauce:

  • 1 cup fresh cilantro leaves (packed)
  • 1/2 cup fresh mint leaves (packed)
  • 2-3 green chilies (adjust to your spice preference)
  • 2 cloves garlic
  • 1-inch piece of ginger
  • 1/2 cup plain yogurt
  • Juice of 1 lime
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste

For the Chicken:

  • 1.5 pounds boneless, skinless chicken (cut into bite-sized pieces)
  • 2 tablespoons oil
  • 1 onion (finely chopped)
  • 1/2 cup heavy cream (optional for a richer sauce)
  • Salt and pepper to taste

Instructions:

  1. In a blender or food processor, combine all the ingredients for the green sauce (cilantro, mint, green chilies, garlic, ginger, yogurt, lime juice, cumin powder, coriander powder, and salt). Blend until you have a smooth green paste. You can add a little water if needed to achieve the desired consistency.
  2. In a large skillet or pan, heat the oil over medium heat. Add the chopped onion and sauté until it becomes soft and translucent.
  3. Add the chicken pieces to the skillet and cook until they turn white on the outside.
  4. Pour the green sauce over the chicken and stir well to coat the chicken evenly.
  5. Lower the heat, cover the skillet, and let the chicken simmer in the sauce for about 10-15 minutes, or until it's cooked through.
  6. If you'd like a creamier sauce, add the heavy cream to the skillet and stir until well combined. Season with salt and pepper to taste.
  7. Serve your green chicken hot, garnished with additional cilantro or mint leaves, and with rice or naan bread on the side.
