DAHI WALA CHICKEN

Serve 2-4

Ingredients

For Chicken Marination

  • 1 no. Green chilli, diagonally sliced, рд╣рд░реА рдорд┐рд░реНрдЪ
  • ┬╜ tbsp Tender Coriander stems, finely chopped, рдзрдирд┐рдпрд╛ рдХреЗ рдбрдВрдард▓
  • 1 tbsp fresh Mint leaves, roughly chopped, рдкреБрджреАрдирд╛ рдкрддреНрддрд╛
  • 2 tsp Ginger Garlic paste, рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдХрд╛ рдкреЗрд╕реНрдЯ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 2 tsp Oil, рддреЗрд▓
  • 1 tsp Lemon juice, рдиреАрдВрдмреВ рдХрд╛ рд░рд╕
  • ┬╜ tbsp Coriander leaves, roughly chopped, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛
  • 900 gms Chicken (Drumstick & thigh with bones) рдЪрд┐рдХрди

For Ginger Garlic Paste

  • 1 inch Ginger (peeled & sliced) рдЕрджрд░рдХ
  • 7-8 no. Garlic cloves, рд▓рд╣рд╕реБрди
  • 3 no. Green chillies (less spicy & roughly chopped) рд╣рд░реА рдорд┐рд░реНрдЪ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░

For Masala

  • 1 tbsp Black peppercorns, рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ
  • 2 no. Cloves, рд▓реМрдВрдЧ
  • 6-7 no. Black cardamom, рдмрдбрд╝реА рдЗрд▓рд╛рдпрдЪреА
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 2 tbsp Dry Fenugreek leaves, рдХрд╕реВрд░реА рдореЗрдереА

For Dahi Wala Chicken

  • 1 ┬╜ tbsp Oil, рддреЗрд▓
  • 1 tbsp Ghee, рдШреА
  • 3-4 no. Bay leaf, рддреЗрдЬрд╝рдкрддреНрддрд╛
  • 2-4 no. Cloves, рд▓реМрдВрдЧ
  • 2 no. Black cardamom, рдмрдбрд╝реА рдЗрд▓рд╛рдпрдЪреА
  • 1 tsp Cumin seeds, рдЬреАрд░рд╛
  • 2 medium Onion, roughly sliced, рдкреНрдпрд╛рдЬ
  • Marinated Chicken, рдореИрд░рд┐рдиреЗрдЯреЗрдб рдЪрд┐рдХрди
  • Prepared Ginger Garlic Paste, рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдХрд╛ рдкреЗрд╕реНрдЯ
  • 2-3 cups Curd, beaten, рджрд╣реА
  • 2 tbsp Cashew Nut paste, рдХрд╛рдЬреВ рдХреА рдкреЗрд╕реНрдЯ

For Garnish

  • A pinch of Prepared Masala, рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдорд╕рд╛рд▓рд╛
  • fresh Mint sprig, рдкреБрджреАрдирд╛ рдкрддреНрддрд╛
  • fresh Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Chicken Marination

  1. In a bowl, add green chilli, tender coriander stems, mint leaves, ginger garlic paste, salt to taste, oil, coriander leaves and chicken.
  2. Marinate it well and keep it aside for further use.

For Ginger Garlic Paste

  1. In a mortar pestle, add ginger, garlic, green chillies, salt to taste and grind it coarsely.
  2. Keep it aside for further use.

For Masala

  1. In a pan, add black peppercorns, cloves, black cardamom, salt to taste, dry fenugreek leaves and dry roast it for a minute.
  2. Keep it aside for further use.

For Dahi Wala Chicken

  1. In a kadai, add oil, ghee, once it's hot, add bay leaves, cloves, black cardamom, cumin seeds and let it splutter.
  2. Add onion and saute it for 2-3 minutes until translucent.
  3. Add marinated chicken, ginger garlic paste and cook it for a while until tender.
  4. Add curd, cashewnut paste and simmer it for a while until thickens.
  5. Transfer it to a serving dish and drizzle some prepared masala.
  6. Garnish it with coriander sprig and mint sprig.
  7. Serve hot with roti.
