Filipino Carbonara

Filipino-style Carbonara has a unique twist compared to the traditional Italian recipe.

Ingredients:

  • 400g (14 oz) fettuccine or spaghetti
  • 200g (7 oz) bacon, diced
  • 1 cup sliced button mushrooms (optional)
  • 4 cloves garlic, minced
  • 3 large eggs
  • 1 cup evaporated milk
  • 1 cup all-purpose cream
  • 1 cup grated quick-melt cheese or cheddar cheese
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese, for topping
  • Chopped parsley, for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pan, cook the diced bacon over medium heat until it becomes crispy. If using mushrooms, add them to the pan and sauté until they are cooked.
  3. Add minced garlic to the pan and sauté until it becomes aromatic.
  4. In a bowl, whisk together the eggs, evaporated milk, all-purpose cream, and grated quick-melt cheese.
  5. Pour the egg and cream mixture into the pan with bacon, mushrooms, and garlic. Stir continuously over low heat until the sauce thickens. Be careful not to scramble the eggs; the goal is to create a creamy sauce.
  6. Season the sauce with salt and black pepper to taste.
  7. Add the cooked pasta to the pan, tossing it in the creamy sauce until well coated.
  8. Sprinkle grated Parmesan cheese on top and continue tossing until the pasta is evenly coated.
  9. Remove the pan from heat and transfer the Filipino Carbonara to a serving dish.
  10. Garnish with chopped parsley if desired.
