Filipino Carbonara
Filipino-style Carbonara has a unique twist compared to the traditional Italian recipe.
Ingredients:
- 400g (14 oz) fettuccine or spaghetti
- 200g (7 oz) bacon, diced
- 1 cup sliced button mushrooms (optional)
- 4 cloves garlic, minced
- 3 large eggs
- 1 cup evaporated milk
- 1 cup all-purpose cream
- 1 cup grated quick-melt cheese or cheddar cheese
- Salt and black pepper, to taste
- 1/2 cup grated Parmesan cheese, for topping
- Chopped parsley, for garnish (optional)
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a large pan, cook the diced bacon over medium heat until it becomes crispy. If using mushrooms, add them to the pan and sauté until they are cooked.
- Add minced garlic to the pan and sauté until it becomes aromatic.
- In a bowl, whisk together the eggs, evaporated milk, all-purpose cream, and grated quick-melt cheese.
- Pour the egg and cream mixture into the pan with bacon, mushrooms, and garlic. Stir continuously over low heat until the sauce thickens. Be careful not to scramble the eggs; the goal is to create a creamy sauce.
- Season the sauce with salt and black pepper to taste.
- Add the cooked pasta to the pan, tossing it in the creamy sauce until well coated.
- Sprinkle grated Parmesan cheese on top and continue tossing until the pasta is evenly coated.
- Remove the pan from heat and transfer the Filipino Carbonara to a serving dish.
- Garnish with chopped parsley if desired.
