Tortilla Frittata
A tortilla frittata, also known as a Spanish tortilla or tortilla española, is a classic Spanish dish made with eggs, potatoes, and sometimes onions. Here's a simple recipe to make a delicious tortilla frittata:
Ingredients:
- 4-5 medium potatoes, peeled and thinly sliced
- 1 small onion, thinly sliced (optional)
- 6 large eggs
- Salt and pepper, to taste
- Olive oil
- Chopped fresh parsley (optional, for garnish)
Instructions:
- Heat about 1/2 inch of olive oil in a large skillet (preferably non-stick) over medium-high heat. Add the sliced potatoes and onions (if using) to the hot oil. Cook them until they are tender but not browned, stirring occasionally. This process can take around 10-15 minutes.
- While the potatoes and onions are cooking, beat the eggs in a large mixing bowl and season them with salt and pepper.
- Once the potatoes are tender, use a slotted spoon to remove them from the oil and drain them on paper towels. Let them cool for a few minutes.
- Remove most of the oil from the skillet, leaving just a couple of tablespoons behind.
- Add the cooked potatoes and onions to the beaten eggs and gently stir to combine. Let them sit for a few minutes to allow the potatoes to soak up the egg mixture.
- Heat the skillet over medium heat and pour the egg and potato mixture into it. Use a spatula to flatten the top and shape it evenly.
- Cook the tortilla for about 5-7 minutes, or until the edges start to set and the bottom is lightly browned.
- To flip the tortilla, place a large plate or another skillet of similar size on top of the skillet with the tortilla. Carefully and quickly invert the skillet to transfer the tortilla to the plate or other skillet.
- Slide the tortilla back into the original skillet so that the uncooked side is now on the bottom.
- Continue cooking for another 5-7 minutes or until the tortilla is fully set and lightly browned.
- Once the tortilla is cooked through and nicely browned on both sides, remove it from the skillet and let it cool for a few minutes.
- Cut the tortilla into wedges or squares, garnish with chopped fresh parsley if desired, and serve warm or at room temperature.
