Chocolate Snack Cake

This chocolate snack cake bakes up so tender and is topped with decadent chocolate buttercream and chocolate ganache! It's a chocolate lover's dream.

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup hot water

For the Chocolate Frosting:

  • 1/2 cup unsalted butter
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp vanilla extract

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch square baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until the batter is smooth.
  5. Gradually stir in the hot water until the batter is well mixed. The batter will be thin, but that's okay.
  6. Pour the batter into the prepared baking pan.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

For the Chocolate Frosting:

  1. In a saucepan, melt the butter over low heat. Stir in the cocoa powder until the mixture is smooth. Remove it from the heat.
  2. Stir in the powdered sugar, milk, and vanilla extract until the frosting is creamy and well combined.
  3. Pour the chocolate frosting over the cooled cake and spread it evenly.
  4. Allow the frosting to set before cutting and serving the cake.
