Santorini Greece Cake
Creating a Santorini-themed cake is a wonderful idea! While there isn't a specific "Santorini Cake" recipe, you can design a cake that captures the essence of Santorini, Greece. Here's a recipe for a blue and white-themed cake with Mediterranean flavors:
Ingredients:
For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
For the Blueberry-Lemon Filling:
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- Zest and juice of 1 lemon
For the Frosting:
- 2 cups whipped cream or cream cheese frosting
Decoration:
- Blue and white fondant for the Santorini landscape
- Edible flowers, like bougainvillea or edible pearls for added decor
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
- While the cakes are cooling, prepare the blueberry-lemon filling. Combine the blueberries, sugar, lemon zest, and lemon juice in a saucepan. Cook over medium heat until the blueberries burst and the mixture thickens. Let it cool.
- Once the cakes and blueberry filling are cool, spread a layer of whipped cream or cream cheese frosting on top of the first cake layer, then add a layer of the blueberry filling. Repeat for the second layer.
- Place the third cake layer on top and frost the entire cake with your choice of frosting.
- Decorate the cake with blue and white fondant to create a Santorini landscape, and add edible flowers or pearls for extra charm
