Sweet Potato Pie

Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 2-3 tablespoons ice water

For the Filling:

  • 2 cups mashed sweet potatoes (about 2 medium-sized sweet potatoes)
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup milk
  • 3 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions:

For the Pie Crust:

  1. Prepare Pie Crust:
    • In a food processor, combine flour and salt. Add chilled, cubed butter and pulse until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, and pulse until the dough comes together. Be careful not to overmix.
    • Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  2. Roll Out Crust:
    • Preheat your oven to 375°F (190°C). Roll out the chilled pie crust on a floured surface and transfer it to a 9-inch pie dish. Trim any excess dough.
  3. Prebake Crust:
    • Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for about 15 minutes. Remove the weights and parchment paper and bake for an additional 5 minutes until lightly golden. Allow the crust to cool.

For the Filling:

  1. Prepare Sweet Potatoes:
    • Peel, cube, and boil the sweet potatoes until they are fork-tender. Mash them and measure out 2 cups.
  2. Make Filling:
    • In a large bowl, combine the mashed sweet potatoes, melted butter, granulated sugar, brown sugar, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  3. Fill Pie Crust:
    • Pour the sweet potato filling into the prebaked pie crust, smoothing the top with a spatula.
  4. Bake:
    • Bake in the preheated oven for 50-60 minutes or until the center is set. If the edges of the crust start to brown too quickly, you can cover them with foil.
  5. Cool and Serve:
    • Allow the sweet potato pie to cool completely before serving. Serve at room temperature or chilled.
