Ingredients:

For the filling:

  • 1 cup cooked and shredded chicken
  • 1 cup boiled and mashed potatoes
  • 1/2 cup finely chopped onions
  • 1/2 cup frozen peas
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil

For the samosa dough:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • Water, as needed
  • Salt to taste

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the all-purpose flour, salt, and vegetable oil.
    • Gradually add water and knead to form a smooth, pliable dough. Cover and let it rest for 30 minutes.
  2. Prepare the Filling:
    • Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
    • Add chopped onions, garlic, and ginger. Sauté until onions are translucent.
    • Add shredded chicken, mashed potatoes, peas, and all the spices. Cook until well combined and the mixture is dry. Remove from heat and let it cool.
  3. Assemble the Samosas:
    • Divide the dough into small balls and roll each ball into a thin oval or round shape.
    • Cut each oval in half to create two semi-circles.
    • Take one semi-circle, fold it into a cone shape, and seal the edge with water.
    • Fill the cone with the chicken-potato mixture and seal the open edge, pinching to ensure it's closed.
  4. Fry the Samosas:
    • Heat oil in a deep frying pan over medium heat.
    • Once the oil is hot, carefully place the prepared samosas and fry until they turn golden brown and crispy.
    • Remove them with a slotted spoon and place on paper towels to absorb excess oil.
  5. Serve:
    • Serve the chicken samosas hot with your favorite chutney or sauce.
