Sweet Potato Salad

Ingredients:

For the Salad:

  • 3 medium-sized sweet potatoes, peeled and diced into bite-sized cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

  1. Roast Sweet Potatoes:
    • Preheat the oven to 400°F (200°C).
    • Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
    • Roast in the preheated oven for about 25-30 minutes or until the sweet potatoes are tender and slightly caramelized.
  2. Prepare Dressing:
    • While the sweet potatoes are roasting, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to create the dressing. Adjust the seasoning to taste.
  3. Assemble Salad:
    • In a large bowl, combine the roasted sweet potatoes, halved cherry tomatoes, chopped red onion, and fresh parsley.
  4. Add Dressing:
    • Pour the dressing over the salad and gently toss until everything is well coated.
  5. Optional: Add Feta:
    • If you're using feta cheese, sprinkle it over the salad.
  6. Chill (Optional):
    • You can refrigerate the salad for a couple of hours to let the flavors meld, or serve it immediately.
  7. Serve:
    • Garnish with additional parsley if desired. Serve the sweet potato salad chilled or at room temperature.
