Easy Cowboy Casserole
Try this casserole that’s the ideal easy dinner whether you’re at home or in the great outdoors! Nicole shows you how to make a cowboy casserole to feed and please a crowd.
Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (16 ounces) baked beans
- 1 can (10.75 ounces) condensed cheddar cheese soup
- 1 cup frozen corn kernels
- 1 package (8 ounces) cornbread mix
- 1/2 cup milk
- 1 egg
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish.
- In a skillet over medium heat, brown the ground beef with chopped onion and bell pepper. Drain excess fat.
- Stir in the baked beans, condensed cheddar cheese soup, and frozen corn. Season with salt and pepper to taste. Simmer for a few minutes until heated through.
- Transfer the beef mixture to the prepared baking dish, spreading it evenly.
- In a separate bowl, prepare the cornbread mix according to the package instructions, combining the cornbread mix with milk and egg.
- Pour the cornbread batter over the beef mixture in the baking dish, spreading it evenly.
- Sprinkle shredded cheddar cheese on top of the cornbread batter.
- Bake in the preheated oven for about 20-25 minutes, or until the cornbread is golden brown and cooked through.
- Allow the casserole to cool for a few minutes before serving.
