Easy Cowboy Casserole

Try this casserole that’s the ideal easy dinner whether you’re at home or in the great outdoors! Nicole shows you how to make a cowboy casserole to feed and please a crowd.

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (16 ounces) baked beans
  • 1 can (10.75 ounces) condensed cheddar cheese soup
  • 1 cup frozen corn kernels
  • 1 package (8 ounces) cornbread mix
  • 1/2 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with chopped onion and bell pepper. Drain excess fat.
  3. Stir in the baked beans, condensed cheddar cheese soup, and frozen corn. Season with salt and pepper to taste. Simmer for a few minutes until heated through.
  4. Transfer the beef mixture to the prepared baking dish, spreading it evenly.
  5. In a separate bowl, prepare the cornbread mix according to the package instructions, combining the cornbread mix with milk and egg.
  6. Pour the cornbread batter over the beef mixture in the baking dish, spreading it evenly.
  7. Sprinkle shredded cheddar cheese on top of the cornbread batter.
  8. Bake in the preheated oven for about 20-25 minutes, or until the cornbread is golden brown and cooked through.
  9. Allow the casserole to cool for a few minutes before serving.
