Ingredients:

  • Turkey drippings (from the roasted turkey)
  • 1/4 cup all-purpose flour
  • 4 cups turkey or chicken broth (low-sodium)
  • Salt and black pepper to taste
  • Optional: Giblets (turkey liver, heart, and gizzard), finely chopped and cooked (if you like a chunkier gravy)

Instructions:

1. Collect Drippings:

  • After roasting your turkey, collect the drippings from the roasting pan. You can do this by pouring the contents of the roasting pan into a bowl, letting the fat rise to the top.

2. Skim the Fat:

  • Skim off the fat from the top of the drippings. You can use a fat separator or a spoon to do this.

3. Make a Roux:

  • In a saucepan over medium heat, combine about 1/4 cup of the skimmed turkey fat (or substitute with butter) with an equal amount of all-purpose flour to create a roux. Stir continuously to avoid lumps.

4. Cook the Roux:

  • Cook the roux for a few minutes until it turns a light golden brown. This helps remove the raw taste of the flour.

5. Add Drippings and Broth:

  • Gradually whisk in the turkey drippings and turkey or chicken broth into the roux. Continue whisking to avoid lumps.

6. Bring to a Simmer:

  • Bring the mixture to a simmer over medium heat. This helps the gravy thicken.

7. Add Giblets (Optional):

  • If you like a chunkier gravy, add finely chopped and cooked giblets at this point.

8. Season:

  • Season the gravy with salt and black pepper to taste. Remember that the drippings and broth might already contain salt, so adjust accordingly.

9. Simmer and Stir:

  • Allow the gravy to simmer for about 10-15 minutes, stirring occasionally. This helps it thicken and the flavors to meld.

10. Adjust Consistency:

  • If the gravy is too thick, you can add more broth to achieve the desired consistency. If it's too thin, you can let it simmer a bit longer.

11. Strain (Optional):

  • If you prefer a smoother gravy, you can strain it to remove any lumps or solid bits.

12. Serve:

  • Once the gravy reaches the desired consistency and flavors, remove it from heat and serve alongside your roasted turkey.
