Ingredients:

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 3 to 4 tablespoons buttermilk (or milk)

Instructions:

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the butter and sugar until smooth.
  4. Beat in the egg, vanilla extract, and almond extract (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If the dough is too dry, add buttermilk (or milk) one tablespoon at a time until it comes together.
  7. Roll rounded tablespoons of dough into balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Flatten each cookie slightly with the bottom of a glass or your fingers.
  9. Bake for 8 to 10 minutes, or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
