BANARASI CHUTNEY WALA PANEER

Ingredients

For Chutney

  • 1-2 tbsp Oil, рддреЗрд▓
  • 1 tbsp Ghee, рдШреА
  • 2 medium Onion, sliced, рдкреНрдпрд╛рдЬ
  • 1 inch Ginger (peeled & roughly chopped) рдЕрджрд░рдХ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 cup Coriander leaves, roughly chopped, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛
  • ┬╝ cup Mint leaves, roughly chopped, рдкреБрджреАрдирд╛ рдкрддреНрддрд╛
  • 4-5 no. Cashew Nuts, рдХрд╛рдЬреВ
  • 4 no. Green chillies (less spicy & roughly chopped) рд╣рд░реА рдорд┐рд░реНрдЪ
  • 1 medium Tomato, roughly diced, рдЯрдорд╛рдЯрд░

For Frying Paneer

  • 1-2 tbsp Oil, рддреЗрд▓
  • 1 tbsp Ghee, рдШреА
  • 500 gm fresh Paneer, diced, рдкрдиреАрд░

For Soaking

  • ┬╜ cup Water, рдкрд╛рдиреА
  • Fried Paneer, рддрд▓рд╛ рд╣реБрдЖ рдкрдиреАрд░
  • For Curd Mixture
  • 1 cup Curd, beaten, рджрд╣реА
  • ┬╜ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • ┬╜ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • ┬╜ tsp Coriander powder, рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░

For Chutney Wala Paneer

  • Remaining excess oil, рддреЗрд▓
  • A pinch of asafoetida, рд╣реАрдВрдЧ
  • 2-3 no. Cloves, рд▓реМрдВрдЧ
  • 5-6 no. Black peppercorns, рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ
  • 2 no. Green cardamom, рд╣рд░реА рдЗрд▓рд╛рдпрдЪреА
  • ┬╜ tsp Fennel seeds, рд╕реМрдВрдл
  • ┬╜ tsp Cumin seeds, рдЬреАрд░рд╛
  • ┬╝ tsp dry Fenugreek seeds, рдореЗрдереА рджрд╛рдирд╛
  • 1 no. dry Red chili, рд╕реВрдЦреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ
  • Prepared Curd Mixture, рддрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рджрд╣реА рдХрд╛ рдорд┐рд╢реНрд░рдг
  • Prepared Chutney, рддрдпрд╛рд░ рдХреА рд╣реБрдИ рдЪрдЯрдиреА
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╜ tsp Sugar, рдЪреАрдиреА
  • 1 tsp Black peppercorns, crushed, рдХреБрдЯреА рд╣реБрдИ рдХрд╛рд▓реА рдорд┐рд░реНрдЪ
  • ┬╝ tsp dry Mango powder, рдЖрдордЪреВрд░ рдкрд╛рдЙрдбрд░
  • 2-3 tbsp Fresh cream (for finishing) рддрд╛рдЬрд╝рд╛ рдорд▓рд╛рдИ
  • Roasted Nuts, рднреБрдиреЗ рд╣реБрдП рдореЗрд╡реЗ
  • fried Paneer, рддрд▓рд╛ рд╣реБрдЖ рдкрдиреАрд░
  • 2 tbsp Fresh cream, рддрд╛рдЬрд╝рд╛ рдорд▓рд╛рдИ
  • For Roasting Nuts
  • 1 tbsp Ghee, рдШреА
  • 7-8 no. Raisins, рдХрд┐рд╢рдорд┐рд╢
  • 7-8 no. Cashew Nuts, рдХрд╛рдЬреВ

For Garnish

  • Pomegranate pearls, рдЕрдирд╛рд░ рдХреЗ рджрд╛рдиреЗ
  • Fresh cream, рддрд╛рдЬрд╝рд╛ рдорд▓рд╛рдИ
  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Chutney

  1. In a pan, add oil, ghee, once it's hot, add onions, salt to taste, ginger and saute it well until translucent.
  2. Transfer it to the mixer grinder jar, add coriander leaves, mint leaves, cashew nuts, green chillies, tomato and grind it into a smooth paste.
  3. Keep it aside for further use.
  4. For Frying Paneer
  5. In the same pan, add oil, ghee, once it's hot, add paneer and fry until golden brown.
  6. Transfer it to a tray, add water and leave it aside to soak for 15-20 minutes.
  7. Keep it aside for further use.

For Curd Mixture

  1. In a bowl, add curd, degi red chili powder, turmeric powder, coriander powder and mix it well.
  2. Keep it aside for further use.

For Chutney Wala Paneer

  1. In a kadai or handi, add remaining excess oil, once it's hot, add a pinch of asafoetida, cloves, black peppercorns, green cardamom, fennel seeds, cumin seeds, dry fenugreek seeds, dry red chili and saute it well.
  2. Add prepared curd mixture and cook it for 4-5 minutes on medium flames.
  3. Add prepared chutney, salt to taste, sugar and cook it for a while.
  4. Add black peppercorns, dry mango powder, fresh cream and mix it well.
  5. Finish it with roasted nuts, fried paneer, fresh cream and give it a good mix.
  6. Transfer it to a serving dish, garnish it with pomegranate pearls, fresh cream and coriander sprig.
  7. Serve hot with roti or paratha.

For Roasting Nuts

  1. In a pan, heat ghee, add raisins, cashew nuts and roast for 1-2 minutes until golden in color on medium flames.
  2. Transfer it to a tray or bowl and keep it aside for further use.
