Chicken Sukiyaki

Sukiyaki is a popular Japanese hot pot dish that typically features thinly sliced beef, tofu, and vegetables cooked in a sweet and savory broth. It’s a communal dish often enjoyed with family or friends, especially during colder seasons.

Ingredients:

  • 1 pound boneless, skinless chicken thighs, thinly sliced
  • 1/2 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 1/4 cup sake (Japanese rice wine)
  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1/2 napa cabbage, sliced
  • 1/2 cup shiitake mushrooms, sliced
  • 1 cup enoki mushrooms (or other mushrooms of your choice)
  • 1/2 cup firm tofu, cubed
  • 2 green onions, sliced
  • 2 cups dashi (Japanese soup stock) or chicken broth

Instructions:

1. Prepare the Broth:

  • In a bowl, mix together soy sauce, mirin, sake, and sugar to create the sukiyaki broth.

2. Heat Oil:

  • Heat vegetable oil in a large skillet or sukiyaki pan over medium heat.

3. Cook Chicken:

  • Add the sliced chicken to the pan and cook until browned.

4. Add Vegetables:

  • Add the sliced onion, julienned carrots, napa cabbage, shiitake mushrooms, and tofu to the pan. Stir-fry for a couple of minutes until the vegetables start to soften.

5. Pour Broth:

  • Pour the sukiyaki broth over the chicken and vegetables. Add the dashi or chicken broth.

6. Simmer:

  • Allow the ingredients to simmer in the broth until they are cooked through and flavors meld.

7. Serve:

  • Once everything is cooked, transfer the sukiyaki to individual bowls or serve directly from the pan. Garnish with sliced green onions.

8. Enjoy:

  • Enjoy your Chicken Sukiyaki with steamed rice or udon noodles!
