  • 2 Egg yolks (40g)
  • 20g Sugar
  • 40g Milk
  • 50g Dark chocolate
  • 50g Unsalted butter
  • 2 Egg whites (120g)
  • 50g Sugar
  • 40g Cocoa powder

①Separate the egg into egg yolk and egg white, and refrigerate the egg white.

②Add sugar to the egg yolk and mix well with a whisk until it becomes whitish.

③Finely chop the chocolate.

④In a bowl, put milk and butter, heat in a 600W microwave for 50 seconds, and mix. Add the chopped chocolate and mix slowly until melted.

⑤Once the chocolate has melted, add the egg yolk mixture from step 2 and mix well. The egg yolk batter is now ready.

⑥Beat the chilled egg white with a hand mixer at low speed. Once it forms white foam, add half of the sugar and beat at medium speed. When the sugar is melted and the whole mixture becomes glossy, add the remaining sugar and beat until stiff peaks form. Finally, mix at low speed for about 30 seconds. Preheat the oven to 170°C at this point.

⑦Add 1/3 of the meringue mixture from step 6 to the mixture from step 5 and mix. Sift cocoa and add it, then mix.

⑧Add the mixture from step 7 to the bowl with the remaining meringue and mix everything.

⑨Put the batter into a pastry bag. Line muffin cups with paper liners and pipe in the batter.

⑩Bake in a preheated oven at 170°C for 22 minutes. Once cracks appear on top and they have risen evenly, they are done!
