These oatmeal cups are a convenient and customizable breakfast option. You can make a batch ahead of time and store them in the fridge for a quick and easy morning meal

Ingredients:

  • 2 cups old-fashioned oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional Add-ins: dried fruits, nuts, chocolate chips, or fresh berries

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. Mix Wet Ingredients:
    • In a mixing bowl, whisk together the egg, milk, maple syrup (or honey), and vanilla extract.
  3. Combine Dry Ingredients:
    • In a separate bowl, mix together the old-fashioned oats, baking powder, and salt.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until well combined.
  5. Add Optional Add-ins:
    • Fold in any optional add-ins such as dried fruits, nuts, chocolate chips, or fresh berries.
  6. Scoop into Muffin Tin:
    • Spoon the oatmeal mixture into each muffin cup, filling them nearly to the top.
  7. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool:
    • Allow the oatmeal cups to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely.
  9. Serve:
    • Serve the oatmeal cups warm or at room temperature.
