Oatmeal Cups

These oatmeal cups are a convenient and customizable breakfast option. You can make a batch ahead of time and store them in the fridge for a quick and easy morning meal
Ingredients:
- 2 cups old-fashioned oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup maple syrup or honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional Add-ins: dried fruits, nuts, chocolate chips, or fresh berries
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- Mix Wet Ingredients:
- In a mixing bowl, whisk together the egg, milk, maple syrup (or honey), and vanilla extract.
- Combine Dry Ingredients:
- In a separate bowl, mix together the old-fashioned oats, baking powder, and salt.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until well combined.
- Add Optional Add-ins:
- Fold in any optional add-ins such as dried fruits, nuts, chocolate chips, or fresh berries.
- Scoop into Muffin Tin:
- Spoon the oatmeal mixture into each muffin cup, filling them nearly to the top.
- Bake:
- Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Cool:
- Allow the oatmeal cups to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely.
- Serve:
- Serve the oatmeal cups warm or at room temperature.
