Easy Breakfast Tortilla Pizza

Ingredients:

  • 1 large tortilla
  • 1/4 cup tomato sauce or salsa
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 2 eggs
  • Salt and pepper to taste
  • Optional toppings: diced bell peppers, tomatoes, cooked bacon, or spinach

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the tortilla on a baking sheet or a pizza stone.
  3. Spread tomato sauce or salsa evenly over the tortilla, leaving a small border around the edges.
  4. Sprinkle shredded cheese over the sauce, covering the entire tortilla.
  5. Create two wells in the cheese and sauce to crack the eggs into. Be careful not to break the yolks.
  6. Season the eggs with salt and pepper.
  7. Add any additional toppings you like, such as diced bell peppers, tomatoes, cooked bacon, or spinach.
  8. Bake in the preheated oven for about 10-12 minutes or until the cheese is melted, and the eggs are cooked to your liking.
  9. Remove from the oven and let it cool for a minute.
