Simple Pea & Ham Soup
Simple Pea & Ham Soup | Cosy season is well and truly here! Nothing like a steaming bowl of soup for lunch and even better this recipe serves four for less than €5, with ingredients as always from Dunnes Stores
Serves: 4
Time: 25 mins
- 25g butter, plus extra to serve
- 1 onion, diced
- 450ml hot vegetable stock
- 450g frozen garden peas
- 150ml Dunnes Stores fresh cream
- Leftover ham, shredded, to serve
- Buttermilk soda bread, to serve
- Olive oil, to serve
- Sea salt and freshly ground black pepper
- Melt the butter in a medium pan and gently sauté the onion for 6-8 minutes until softened but not coloured.
- Increase the heat, add the stock and bring to a rolling boil. Pour the peas in, return to the boil and then reduce the heat to simmer for 6-8 minutes until the peas are tender.
- Using a blender, blitz the mix until smooth. Season to taste. Add the cream and blend in.
- Ladle the soup into bowls, scatter the ham on top of each and serve with a final seasoning, drizzle of olive oil and sliced, buttered bread.
