It carries the same color and texture as the Christmas Plum cake but follows a totally different recipe and set of ingredients.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup plain yogurt or buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup mixed dried fruits (raisins, currants, chopped dates, chopped apricots, etc.)
  • 1/2 cup chopped nuts (walnuts, almonds, or pecans)
  • Zest of 1 orange or lemon
  • 2 tablespoons fruit juice (orange juice, apple juice, etc.)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Prepare Dry Ingredients:
    • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add Eggs and Vanilla:
    • Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Incorporate Dry Ingredients:

  7. Add Fruit Juice:
    • Stir in the fruit juice to enhance the flavor and moisture of the cake batter.
  8. Bake:
