Homemade Mochi

Ingredients:

  • 1 cup sweet rice flour (glutinous rice flour)
  • 1/4 cup sugar
  • 1 cup water
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • Cornstarch or potato starch for dusting

Instructions:

  1. Prepare the Mochi Dough:
    • In a mixing bowl, whisk together sweet rice flour, sugar, lemon zest, and lemon juice.
    • Gradually add water to the dry ingredients, stirring constantly to avoid lumps.
  2. Steam the Mochi:
    • Pour the mixture into a heatproof dish or a shallow pan.
    • Steam the mixture over medium-high heat for about 20-30 minutes, or until the mixture becomes translucent.
  3. Cool the Mochi:
    • Let the steamed mochi cool to room temperature.
  4. Shape the Mochi:
    • Dust your hands and a clean surface with cornstarch or potato starch to prevent sticking.
    • Scoop out spoonfuls of mochi and shape them into small balls or rectangles. You can also use cookie cutters for fun shapes.
  5. Serve:
    • Your homemade Lemon Mochi is ready to be enjoyed! You can eat it as is, or dust it with more starch and fill it with a lemon-flavored filling if you like.

Optional Filling:

  • Make a lemon-flavored filling by combining sweetened condensed milk with a bit of lemon juice and lemon zest. Adjust the sweetness and tartness to your liking.

Tips:

  • If the mochi becomes too sticky while shaping, dust your hands and the mochi with more starch.
