Afghani Chicken Biryani
Ingredients:
- 2 cups basmati rice, soaked
- 500g chicken, cut into pieces
- 1 cup plain yogurt
- 1 large onion, thinly sliced
- 3 tomatoes, chopped
- 1/4 cup cooking oil or ghee
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Fresh cilantro and mint for garnish
- Salt and pepper to taste

Cooking Steps:
- Marinate chicken with yogurt, ginger-garlic paste, cumin seeds, coriander powder, turmeric powder, garam masala, salt, and pepper. Allow it to marinate for at least 2 hours.
- In a large pot, heat oil or ghee. Sauté sliced onions until golden brown.
- Add marinated chicken and cook until it's browned and cooked through.
- Layer soaked basmati rice on top of the chicken.
- Sprinkle chopped tomatoes, fresh cilantro, and mint over the rice.
- Cover the pot with a tight-fitting lid and let it cook on low heat until the rice is tender and cooked.
- Gently fluff the rice with a fork, ensuring the layers are well mixed.
- Garnish with additional fresh cilantro and mint before serving.
