Afghani Chicken Biryani

Ingredients:

  • 2 cups basmati rice, soaked
  • 500g chicken, cut into pieces
  • 1 cup plain yogurt
  • 1 large onion, thinly sliced
  • 3 tomatoes, chopped
  • 1/4 cup cooking oil or ghee
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Fresh cilantro and mint for garnish
  • Salt and pepper to taste

Cooking Steps:

  1. Marinate chicken with yogurt, ginger-garlic paste, cumin seeds, coriander powder, turmeric powder, garam masala, salt, and pepper. Allow it to marinate for at least 2 hours.
  2. In a large pot, heat oil or ghee. Sauté sliced onions until golden brown.
  3. Add marinated chicken and cook until it's browned and cooked through.
  4. Layer soaked basmati rice on top of the chicken.
  5. Sprinkle chopped tomatoes, fresh cilantro, and mint over the rice.
  6. Cover the pot with a tight-fitting lid and let it cook on low heat until the rice is tender and cooked.
  7. Gently fluff the rice with a fork, ensuring the layers are well mixed.
  8. Garnish with additional fresh cilantro and mint before serving.
