This Hungarian-Inspired Creamy Mushroom Soup from whisperofyum is like a warm hug.

Ingredients:

  • 1 pound (450g) mushrooms, sliced (use a mix of varieties for depth of flavor)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups (946ml) vegetable or mushroom broth
  • 1 cup (240ml) milk (whole or 2%)
  • 1/2 cup (120ml) heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Sauté Mushrooms:
    • In a large pot, heat olive oil over medium heat. Add sliced mushrooms and cook until they release their moisture and become golden brown. Remove a few slices for garnish if desired.
  2. Cook Onion and Garlic:
    • Add chopped onion to the pot and sauté until it becomes translucent. Add minced garlic and cook for an additional 1-2 minutes.
  3. Make Roux:
    • Sprinkle flour over the mushroom mixture, stirring constantly. Cook for 2-3 minutes to create a roux.
  4. Add Broth and Milk:
    • Gradually pour in vegetable or mushroom broth, stirring continuously to avoid lumps. Add milk and continue stirring until well combined.
  5. Simmer:
    • Bring the soup to a simmer and let it cook for about 10-15 minutes, allowing it to thicken.
  6. Blend (Optional):
    • For a smoother consistency, you can use an immersion blender to blend the soup. Leave some mushroom slices intact for texture.
  7. Add Cream and Thyme:
    • Stir in heavy cream, dried thyme, salt, and pepper. Simmer for an additional 5 minutes, allowing the flavors to meld.
  8. Finish with Butter:
    • Add unsalted butter to the soup, stirring until melted. This adds richness to the soup.
  9. Adjust Seasoning:
    • Taste and adjust the seasoning as needed. If it's too thick, you can add more broth or milk to reach your desired consistency.
  10. Serve:
