BBQ Cajun Chicken Tacos

Feel free to customize the toppings based on your preferences, such as adding sour cream, avocado slices, or hot sauce.

Ingredients:

For Cajun Chicken:

  • 1 lb (about 450g) boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil

For BBQ Sauce:

  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce

For Tacos:

  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. In a bowl, toss the chicken strips with Cajun seasoning until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat. Add the Cajun-seasoned chicken strips and cook until browned and cooked through, about 5-7 minutes.
  3. In a small saucepan, mix together barbecue sauce, honey, Dijon mustard, and Worcestershire sauce. Heat over low heat until warmed through.
  4. Pour the BBQ sauce over the cooked Cajun chicken in the skillet. Stir to coat the chicken evenly in the sauce. Let it simmer for a couple of minutes until the sauce thickens slightly.
  5. Warm the tortillas according to package instructions.
  6. Assemble the tacos by placing Cajun BBQ chicken on each tortilla. Top with shredded lettuce, diced tomatoes, cheddar cheese, and red onions.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
