Gluten Free Pancakes
These Gluten Free Pancakes are light and fluffy and incredibly tasty! If you’re new to being gluten free, this is a perfect recipe to try.
Ingredients:
- 1 cup gluten-free all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or non-dairy alternative)
- 1 large egg
- 2 tablespoons melted butter (or oil for dairy-free option)
- 1 teaspoon vanilla extract
Instructions:
1. Mix Dry Ingredients:
- In a bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.
2. Mix Wet Ingredients:
- In another bowl, whisk together the buttermilk, egg, melted butter (or oil), and vanilla extract.
3. Combine Mixtures:
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. The batter might be slightly lumpy.
4. Rest the Batter:
- Let the batter rest for a few minutes. This allows the gluten-free flour to absorb the liquid, resulting in fluffier pancakes.
5. Cook the Pancakes:
- Heat a griddle or non-stick skillet over medium heat. Lightly grease the surface with oil or cooking spray.
- Pour 1/4 cup portions of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
6. Serve:
- Once cooked, serve the gluten-free pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
