These Gluten Free Pancakes are light and fluffy and incredibly tasty! If you’re new to being gluten free, this is a perfect recipe to try.

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or non-dairy alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or oil for dairy-free option)
  • 1 teaspoon vanilla extract

Instructions:

1. Mix Dry Ingredients:

  • In a bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.

2. Mix Wet Ingredients:

  • In another bowl, whisk together the buttermilk, egg, melted butter (or oil), and vanilla extract.

3. Combine Mixtures:

  • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. The batter might be slightly lumpy.

4. Rest the Batter:

  • Let the batter rest for a few minutes. This allows the gluten-free flour to absorb the liquid, resulting in fluffier pancakes.

5. Cook the Pancakes:

  • Heat a griddle or non-stick skillet over medium heat. Lightly grease the surface with oil or cooking spray.
  • Pour 1/4 cup portions of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

6. Serve:

  • Once cooked, serve the gluten-free pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
