FigTart
Ingredients:
For the Tart Crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons ice water
For the Filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
For the Topping:
- Fresh figs, sliced
- Honey for drizzling
Instructions:
1. Prepare the Tart Crust:
- In a food processor, combine flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and ice water. Add this to the flour mixture and pulse until the dough comes together.
- Turn the dough out onto a floured surface, knead it briefly, and shape it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
2. Roll and Bake the Crust:
- Preheat your oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface and fit it into a tart pan. Trim any excess dough.
- Line the crust with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes, then remove the weights and bake for an additional 10 minutes or until the crust is golden brown. Allow it to cool completely.
3. Prepare the Filling:
- In a bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
4. Assemble the Tart:
- Spread the cream cheese filling evenly over the cooled tart crust.
5. Add the Fig Topping:
- Arrange the sliced figs on top of the cream cheese filling.
6. Drizzle with Honey:
- Drizzle honey over the figs for added sweetness.
7. Chill and Serve:
- Chill the tart in the refrigerator for at least 1 hour before serving.
8. Serve and Enjoy:
- Slice and serve your delicious Fig Tart. It's a perfect balance of sweetness and creaminess.
