For the Omelette:

  • 2 eggs
  • Salt and pepper to taste
  • 1 tablespoon oil

For the Garlic Chilli Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon red chilli flakes (adjust to taste)
  • 1 teaspoon sugar
  • 1 tablespoon oil


  1. Prepare the Garlic Chilli Sauce:
    • In a bowl, mix together soy sauce, vinegar, ketchup, minced garlic, red chilli flakes, and sugar. Set aside.
  2. Make the Omelette:
    • In a bowl, beat the eggs and season with salt and pepper.
    • Heat oil in a non-stick pan over medium heat.
    • Pour the beaten eggs into the pan, swirling to ensure an even layer.
    • Cook until the edges start to lift and the bottom is golden brown. Flip and cook the other side until it's cooked through.
  3. Crisp it Up:
    • Once the omelette is cooked, transfer it to a cutting board and cut it into bite-sized strips or squares.
  4. Prepare the Sauce:
    • In a pan, heat oil over medium heat. Add the garlic chilli sauce mixture prepared earlier.
  5. Combine:
    • Add the omelette pieces to the sauce in the pan. Toss until the omelette pieces are coated in the sauce and heated through.
  6. Serve:
    • Plate the crispy egg omelette with garlic chilli sauce and garnish with additional chilli flakes or chopped green onions if desired.
