Ingredients:

  • 1 ripe papaya
  • 1 tablespoon lemon juice
  • Salt, to taste

Instructions:

  1. Preheat your oven to 200°F (95°C).
  2. Peel the papaya and cut it in half. Remove the seeds.
  3. Slice the papaya thinly using a mandoline slicer or a sharp knife. Thinner slices will result in crispier chips.
  4. Place the papaya slices in a bowl and toss them with lemon juice to prevent browning.
  5. Line a baking sheet with parchment paper. Arrange the papaya slices in a single layer on the baking sheet, ensuring they do not overlap.
  6. Sprinkle salt over the papaya slices.
  7. Bake in the preheated oven for 2-3 hours or until the chips are dry and crispy. Flip the slices halfway through the baking time.
  8. Keep an eye on them in the last hour to prevent over-browning. The chips are ready when they are golden brown and crisp.
  9. Remove from the oven and let them cool completely. They will continue to crisp up as they cool.
  10. Once cooled, store the papaya chips in an airtight container.
