Ingredients:

  1. 1 cup sweet rice flour
  2. 1/4 cup sugar
  3. 1 cup coconut milk
  4. 1/2 cup pineapple juice
  5. Shredded coconut (for coating)
  6. Cornstarch (for dusting)

Instructions:

  1. In a bowl, mix sweet rice flour and sugar.
  2. Gradually add coconut milk and pineapple juice to the dry mixture, stirring to avoid lumps.
  3. Microwave the mixture in short intervals, stirring each time until it becomes a thick, sticky dough.
  4. Let the mochi dough cool to room temperature.
  5. Dust your hands and a clean surface with cornstarch.
  6. Take small portions of the mochi dough, flatten them, and add a small amount of shredded coconut in the center.
  7. Fold the edges to seal the mochi, forming small balls.
  8. Roll the mochi balls in shredded coconut for coating.
  9. Repeat the process for the remaining dough.
  10. Chill the Pina Colada Mochi in the refrigerator before serving.
