Pina Colada Mochi

Ingredients:
- 1 cup sweet rice flour
- 1/4 cup sugar
- 1 cup coconut milk
- 1/2 cup pineapple juice
- Shredded coconut (for coating)
- Cornstarch (for dusting)
Instructions:
- In a bowl, mix sweet rice flour and sugar.
- Gradually add coconut milk and pineapple juice to the dry mixture, stirring to avoid lumps.
- Microwave the mixture in short intervals, stirring each time until it becomes a thick, sticky dough.
- Let the mochi dough cool to room temperature.
- Dust your hands and a clean surface with cornstarch.
- Take small portions of the mochi dough, flatten them, and add a small amount of shredded coconut in the center.
- Fold the edges to seal the mochi, forming small balls.
- Roll the mochi balls in shredded coconut for coating.
- Repeat the process for the remaining dough.
- Chill the Pina Colada Mochi in the refrigerator before serving.
