Ingredients:

  • 4 bone-in, skin-on chicken thighs (calories depend on size and preparation)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced (calories depend on type)
  • 1 cup cherry tomatoes, halved (calories depend on size)
  • 1 cup chicken broth (around 10 kcal)
  • 1/2 cup dry white wine (calories depend on brand)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Chopped fresh parsley for garnish

Cooking Steps:

Step 1: Season the chicken thighs with salt and black pepper.

Step 2: In a large skillet, heat olive oil over medium-high heat. Brown the chicken thighs on both sides. Remove and set aside.

Step 3: In the same skillet, add chopped onions and garlic. Sauté until softened.

Step 4: Add sliced mushrooms and cook until they release their moisture and start to brown.

Step 5: Stir in tomato paste, ensuring it coats the vegetables.

Step 6: Pour in white wine, scraping the bottom of the skillet to deglaze.

Step 7: Return the browned chicken thighs to the skillet. Add cherry tomatoes, chicken broth, dried thyme, and a bay leaf.

Step 8: Bring the mixture to a simmer, cover, and cook for about 25-30 minutes, or until the chicken is cooked through.

Step 9: Remove the bay leaf and discard. Adjust seasoning if needed.

Step 10: Garnish with chopped fresh parsley before serving.
