  • 200g ramen noodles
  • 4 cups vegetable or chicken broth
  • 3 tablespoons miso paste
  • 1 cup sliced shiitake mushrooms
  • 1 cup shredded cabbage
  • 1 cup sliced green onions
  • 2 boiled eggs, halved
  • 1 sheet nori (seaweed), cut into strips
  • 1 tablespoon sesame oil
  • Optional: tofu, corn, sesame seeds for extra toppings

Step 1: Preparing the Broth In a pot, bring the vegetable or chicken broth to a gentle simmer. Dissolve miso paste in a small amount of broth and add it to the pot. Stir well to combine.

Step 2: Sautéing Mushrooms and Cabbage In a separate pan, sauté sliced shiitake mushrooms and shredded cabbage in sesame oil until tender.

Step 3: Cooking Ramen Noodles Cook ramen noodles according to package instructions. Drain and set aside.

Step 4: Assembling the Bowl Divide the cooked ramen noodles among serving bowls. Pour the miso broth over the noodles.

Step 5: Adding Toppings Top the ramen with sautéed mushrooms, cabbage, sliced green onions, boiled eggs, nori strips, and any additional toppings of your choice.
