Buckeye Candies

Enjoy these sweet and peanut buttery Buckeye Candies!

Ingredients:

  • 1 1/2 cups creamy peanut butter
  • 1 cup unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 4 cups powdered sugar
  • A pinch of salt
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening

Instructions:

  1. In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract. Mix until well combined.
  2. Gradually add powdered sugar and salt, stirring until the mixture becomes a thick dough.
  3. Shape the dough into small, bite-sized balls and place them on a parchment paper-lined baking sheet.
  4. Insert a toothpick into the top of each peanut butter ball. Freeze the balls for about 30 minutes.
  5. In a microwave-safe bowl, melt the chocolate chips and vegetable shortening together in 30-second intervals, stirring between each interval until smooth.
  6. Using the toothpick as a handle, dip each frozen peanut butter ball into the melted chocolate, leaving a small portion at the top uncovered to resemble a buckeye nut.
  7. Allow excess chocolate to drip off, then place the dipped buckeyes back onto the parchment paper.
  8. Remove the toothpick and smooth over the hole if needed.
  9. Let the Buckeye Candies set by placing them in the refrigerator for at least 1 hour.
  10. Once the chocolate is completely set, store the Buckeye Candies in an airtight container in the refrigerator.
