Buckeye Candies
Enjoy these sweet and peanut buttery Buckeye Candies!
Ingredients:
- 1 1/2 cups creamy peanut butter
- 1 cup unsalted butter, softened
- 1/2 teaspoon vanilla extract
- 4 cups powdered sugar
- A pinch of salt
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable shortening
Instructions:
- In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract. Mix until well combined.
- Gradually add powdered sugar and salt, stirring until the mixture becomes a thick dough.
- Shape the dough into small, bite-sized balls and place them on a parchment paper-lined baking sheet.
- Insert a toothpick into the top of each peanut butter ball. Freeze the balls for about 30 minutes.
- In a microwave-safe bowl, melt the chocolate chips and vegetable shortening together in 30-second intervals, stirring between each interval until smooth.
- Using the toothpick as a handle, dip each frozen peanut butter ball into the melted chocolate, leaving a small portion at the top uncovered to resemble a buckeye nut.
- Allow excess chocolate to drip off, then place the dipped buckeyes back onto the parchment paper.
- Remove the toothpick and smooth over the hole if needed.
- Let the Buckeye Candies set by placing them in the refrigerator for at least 1 hour.
- Once the chocolate is completely set, store the Buckeye Candies in an airtight container in the refrigerator.
