Best Meatloaf Minis
Here’s a meatloaf recipe for folks who like their meatloaf to look like meatballs. These mini meatloaf meatballs are super flavorful and cook up quickly.
Ingredients:
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup ketchup
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Cooking spray or olive oil (for greasing)
For the Glaze:
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions:
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or olive oil.
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, ketchup, chopped onion, chopped bell pepper, minced garlic, Worcestershire sauce, dried oregano, dried thyme, salt, black pepper, and beaten eggs. Mix until well combined.
- Scoop the mixture into the mini muffin tin, pressing it down to ensure there are no air pockets.
- In a small bowl, whisk together the glaze ingredients: ketchup, brown sugar, and Dijon mustard.
- Spoon a small amount of the glaze over each mini meatloaf.
- Bake in the preheated oven for approximately 20-25 minutes or until the meatloaf minis are cooked through and have an internal temperature of 160°F (71°C).
- Allow the meatloaf minis to cool for a few minutes before removing them from the muffin tin.
- Serve the Meatloaf Minis as an appetizer or with your favorite sides.
