Ricotta Cake

INGREDIENTS

  • 3 eggs
  • 1/2 tsp of salt
  • 160g (3/4 cup) of sugar
  • 110ml (2/5 cup) of olive oil
  • 80ml (5 tbsp) of milk
  • 220g (1 1/2 cups) of flour
  • 8g of baking powder
  • 1 tsp of vanilla extract
  • 260g of cottage cheese
  • 1 egg
  • 2 tbsp of sugar
  • 1 tbsp of cornstarch
  • 1/2 tsp of vanilla extract

METHOD

1. In a bowl mix together eggs, sugar, oil, and milk, add in vanilla extract, flour, and salt.

2. Transfer to the baking pan, in another bowl mix together cheese, egg, vanilla, sugar, and cornstarch.

3. Top the dough with the cheese mixture.

4. Bake at 180°C (356°F) for 35 minutes.
