Pull Apart Apple Cinnamon Bread

Sweet bread with a crispy outside and a super soft cinnamon apple heart. The dough is eggless and made without kneading: no stand mixer and ready in few minutes!

The dough is divided in balls stacked in layers, so the cinnamon apple filling is spread evenly and it makes possible the pull apart effect.

The smell while baking is absolutely unforgettable, this is the perfect Fall and Winter comfort food.

You can prepare it the day before without baking it, store it in refrigerator for one day, then let it rise for 30 minutes at room temperature and bake it.

I sugget you to serve it warm, you won’t regret it.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup warm milk
  • 2 large eggs

Filling:

  • 3 medium-sized apples, peeled and diced
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup unsalted butter, melted

Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, combine flour, sugar, yeast, and salt.
  2. In a separate bowl, whisk together melted butter, warm milk, and eggs. Add this mixture to the dry ingredients and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-2 hours or until it doubles in size.
  5. While the dough is rising, prepare the filling by combining diced apples, brown sugar, cinnamon, nutmeg, and melted butter in a bowl.
  6. Once the dough has risen, punch it down and roll it out into a rectangle.
  7. Spread the apple filling evenly over the dough, leaving a border around the edges.
  8. Roll the dough tightly from the long edge, then cut it into equal-sized pieces.
  9. Place the slices in a greased baking pan, leaving a little space between each.
  10. Cover and let it rise again for about 30 minutes.
  11. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes or until golden brown.
  12. While the bread is baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract.
  13. Once the bread is done, drizzle the glaze over the top while it's still warm.
  14. Allow it to cool slightly before pulling apart and serving.
