Air Fried Veggie Okoy

Ingredients:
- 1 cup grated sweet potato
- 1 cup grated carrot
- 1 cup bean sprouts (togue)
- 1/2 cup thinly sliced green onions
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water (adjust as needed)
- Cooking spray or oil for air frying
Dipping Sauce:
- 1/4 cup soy sauce
- 2 tablespoons vinegar
- 1 clove garlic, minced
- 1/2 teaspoon sugar
- 1/2 teaspoon red pepper flakes (optional)
Instructions:
- In a large bowl, combine grated sweet potato, grated carrot, bean sprouts, green onions, all-purpose flour, cornstarch, baking powder, salt, and black pepper.
- Gradually add water to the mixture until you achieve a thick but pourable batter consistency.
- Preheat your air fryer to 375°F (190°C).
- Lightly grease the air fryer basket with cooking spray or oil.
- Spoon portions of the veggie batter into the air fryer basket, leaving some space between each for even cooking.
- Air fry the veggie okoy for about 10-12 minutes, flipping halfway through, or until they are golden brown and crispy.
- While the okoy is cooking, prepare the dipping sauce by mixing soy sauce, vinegar, minced garlic, sugar, and red pepper flakes (if using). Adjust the taste according to your preference.
- Once the veggie okoy is cooked, remove from the air fryer and let them cool slightly.
- Serve the air-fried veggie okoy with the dipping sauce.
