Air Fried Veggie Okoy

Enjoy these crispy and flavorful Air Fried Veggie Okoy as a delightful snack or appetizer!

Ingredients:

  • 1 cup grated sweet potato
  • 1 cup grated carrot
  • 1 cup bean sprouts (togue)
  • 1/2 cup thinly sliced green onions
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water (adjust as needed)
  • Cooking spray or oil for air frying

Dipping Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon sugar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions:

  1. In a large bowl, combine grated sweet potato, grated carrot, bean sprouts, green onions, all-purpose flour, cornstarch, baking powder, salt, and black pepper.
  2. Gradually add water to the mixture until you achieve a thick but pourable batter consistency.
  3. Preheat your air fryer to 375°F (190°C).
  4. Lightly grease the air fryer basket with cooking spray or oil.
  5. Spoon portions of the veggie batter into the air fryer basket, leaving some space between each for even cooking.
  6. Air fry the veggie okoy for about 10-12 minutes, flipping halfway through, or until they are golden brown and crispy.
  7. While the okoy is cooking, prepare the dipping sauce by mixing soy sauce, vinegar, minced garlic, sugar, and red pepper flakes (if using). Adjust the taste according to your preference.
  8. Once the veggie okoy is cooked, remove from the air fryer and let them cool slightly.
  9. Serve the air-fried veggie okoy with the dipping sauce.
