Rava Upma

Sooji Upma, also known as Semolina Upma, is a popular South Indian dish made from coarse wheat semolina. It's a quick and nutritious breakfast or snack.
Ingredients:
- 1 cup semolina (rava/sooji)
- 2 tablespoons ghee or oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (split black gram)
- 1 teaspoon chana dal (split Bengal gram)
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped carrots
- 1/4 cup green peas
- 1/4 cup finely chopped bell peppers
- 1-2 green chilies, finely chopped
- 1-inch ginger, grated
- 2.5 cups water
- Salt to taste
- Chopped coriander leaves for garnish
- Lemon wedges (optional)
Instructions:
- Dry roast semolina in a pan until it turns golden brown. Set aside.
- In the same pan, heat ghee or oil. Add mustard seeds, urad dal, and chana dal. Let them splutter.
- Add chopped onions, green chilies, and grated ginger. Sauté until onions are translucent.
- Add chopped vegetables (carrots, peas, bell peppers) and sauté for a few minutes.
- Pour water into the pan and bring it to a boil. Add salt.
- Gradually add the roasted semolina while stirring continuously to avoid lumps.
- Reduce heat to low, cover the pan, and let it simmer until the upma is cooked and has a fluffy texture.
- Garnish with chopped coriander leaves and serve hot. Optionally, squeeze some lemon juice before serving.
