Eggs in purgatory: An easy and fast egg dish with tomato sauce
Ingredients:
- 3 eggs
- 300g tomato passata
- 1 garlic clove
- 40g parmigiano cheese
- fresh basil to taste
- olive oil to taste
- salt to taste
- Italian rustic bread 2-3 (slices)
Method:
1. Olive oil in the pan (of course).
2. Sautè onion and garlic til golden.
3. Add the tomato passata, and salt and let it simmer for about 10 min.
4. Plunge the eggs into the sauce and cover the pan for 5 to 6 min.
5. Then add Parmigiano and basil and cover again the pan for another 2 min.
6. Once the eggs are cooked garnish them with some more fresh basil.
