Aloo Bhuna Masala
Ingredients:
- 4 medium-sized potatoes, peeled and cubed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro for garnish

Cooking Steps:
- Heat oil in a pan and add cumin seeds. Once they sizzle, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.
- Mix in tomato puree, coriander powder, turmeric powder, and red chili powder. Cook until the oil separates from the masala.
- Add cubed potatoes, ensuring they are coated with the masala. Cook on medium heat until the potatoes develop a golden crust.
- Sprinkle garam masala and salt. Mix well, cover, and simmer until the potatoes are tender.
- Garnish with fresh cilantro before serving.
