Ingredients:

  • 1 cup urad dal (black gram lentils)
  • 1/4 cup moong dal (split yellow lentils)
  • 1 cup thick yogurt
  • Tamarind chutney
  • Mint and coriander chutney
  • Roasted cumin powder
  • Red chili powder
  • Chaat masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Pomegranate seeds for garnish (optional)

Instructions:

Step 1: Making Dal Dumplings Soak urad dal and moong dal separately for a few hours. Grind them into a smooth batter. Add salt and beat the batter until light and fluffy. Fry small portions in hot oil until golden brown. Drain excess oil.

Step 2: Preparing Yogurt Mixture Whisk yogurt until smooth. Add a pinch of salt and mix well. Immerse the fried dal dumplings in warm water for a few minutes, then gently squeeze out the excess water and place them in the yogurt mixture.

Step 3: Assembling Dahi Bhalla Arrange the soaked dal dumplings in a serving dish. Pour the whisked yogurt over them. Drizzle tamarind chutney and mint-coriander chutney generously.

Step 4: Seasoning Sprinkle roasted cumin powder, red chili powder, and chaat masala over the Dahi Bhalla. Adjust the seasoning according to taste.

Step 5: Garnishing and Serving Garnish with fresh coriander leaves and pomegranate seeds if desired. Serve chilled, allowing the flavors to meld.
