Ingredients:

  • 2 cups gram flour (besan)
  • 1 cup semolina (sooji)
  • 1 cup yogurt
  • 1 teaspoon ginger-green chili paste
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • 1 teaspoon fruit salt (eno)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Cooking Steps:

  1. Prepare Batter:
    • In a bowl, combine gram flour, semolina, yogurt, ginger-green chili paste, turmeric powder, lemon juice, and salt. Mix well to form a smooth batter.
  2. Add Eno (Fruit Salt):
    • Just before steaming, add fruit salt (eno) to the batter. Mix gently, and you will see the batter becoming frothy.
  3. Steam the Batter:
    • Grease a steaming plate or cake tin. Pour the batter into it. Steam for about 15-20 minutes or until a toothpick comes out clean.
  4. Temper the Khaman:
    • In a pan, heat oil. Add mustard seeds and curry leaves. Once they splutter, pour this tempering over the steamed khaman.
  5. Cut and Garnish:
    • Allow the khaman to cool slightly, then cut it into squares or diamonds. Garnish with fresh coriander leaves.
  6. Serve:
    • Serve Nylon Khaman as a delightful snack, typically accompanied by green chutney or tamarind sauce.
