Nylon Khaman

Ingredients:
- 2 cups gram flour (besan)
- 1 cup semolina (sooji)
- 1 cup yogurt
- 1 teaspoon ginger-green chili paste
- 1/2 teaspoon turmeric powder
- 1 tablespoon lemon juice
- 1 teaspoon fruit salt (eno)
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish

Cooking Steps:
- Prepare Batter:
- In a bowl, combine gram flour, semolina, yogurt, ginger-green chili paste, turmeric powder, lemon juice, and salt. Mix well to form a smooth batter.
- Add Eno (Fruit Salt):
- Just before steaming, add fruit salt (eno) to the batter. Mix gently, and you will see the batter becoming frothy.
- Steam the Batter:
- Grease a steaming plate or cake tin. Pour the batter into it. Steam for about 15-20 minutes or until a toothpick comes out clean.
- Temper the Khaman:
- In a pan, heat oil. Add mustard seeds and curry leaves. Once they splutter, pour this tempering over the steamed khaman.
- Cut and Garnish:
- Allow the khaman to cool slightly, then cut it into squares or diamonds. Garnish with fresh coriander leaves.
- Serve:
- Serve Nylon Khaman as a delightful snack, typically accompanied by green chutney or tamarind sauce.
