Ingredients:

  • 2 pounds fresh green beans, trimmed and halved (approx. 220 kcal)
  • 1 can (10.5 oz) condensed cream of mushroom soup (around 300 kcal)
  • 1/2 cup milk (around 60 kcal)
  • 1 teaspoon soy sauce
  • 1/4 teaspoon black pepper
  • 1 1/2 cups crispy fried onions (around 360 kcal)
  • 1/2 cup shredded cheddar cheese (optional, around 220 kcal)

Cooking Steps:

Step 1: Preheat your oven to 350°F (175°C).

Step 2: Blanch the fresh green beans in boiling water for 2-3 minutes until they are bright green and slightly tender. Immediately transfer them to an ice bath to stop the cooking process.

Step 3: In a mixing bowl, combine condensed cream of mushroom soup, milk, soy sauce, and black pepper. Stir until well blended.

Step 4: Add the blanched green beans to the mushroom sauce, mixing until the beans are evenly coated.

Step 5: Fold in 1 cup of crispy fried onions, reserving the remaining 1/2 cup for topping.

Step 6: Transfer the green bean mixture to a casserole dish, spreading it evenly.

Step 7: Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.

Step 8: Remove the casserole from the oven and sprinkle the remaining crispy fried onions (and optional shredded cheddar cheese) over the top.
